Happy Holidays

We spend a lot of time on this blog talking about toxins, the environment, and how we can live healthy lives. I think all of this is very important, and is often overlooked. However, I think it’s also good to stop and remember why this is all so necessary. This past week was Thanksgiving, and hopefully everyone had an amazing time with family and friends, good food, drink, & possibly even a bit of football. I know I did. Thanksgiving is actually one of my very favorite holidays, because it’s a time when everyone gathers and it’s really all about being together. I hope as we enter into this holiday season, we can keep in mind, though all the stresses and traveling etc. that our loved ones are what make it all worth it!

Share a Cause

During my most recent trip to Seattle I was able to visit the new Bill and Melinda Gates Foundation Visitor Center. I was quite impressed (although not surprised), with the level of creativity used for their displays. As most of you probably know, the Gate’s Foundation is an organization which supports education, and works to solve global health and poverty issues.

The thing I loved about their visitor center is that the primary focus was on inspiring others, adults and children alike, to make a difference themselves. They didn’t just talk about the current projects that the Gates Foundation supports, but instead they asked questions. This image below was my favorite display. The Share a Cause tree was full of ideas and suggestions from visitors around the world. A station nearby supplied cards which gave prompts like “I pledge…”, “I support…”, “I volunteer for…” “…. really needs your help”. These cards held ideas, beliefs, needs and opinions from people all over the world. I found it inspiring to read the thoughts that other people wrote down, about what’s important to them, and what they think about. It’s so good to go somewhere like this center, and get a larger perspective on life.

Pumpkin Ravioli with Hazelnut Brown Butter Sauce

I have become a lover of food blogs over the past few months. I have my favorites that I visit frequently. As I’ve begun trying to eat more responsibly, not just healthier but eating what’s in season, I’ve found the need to expand my former food boundaries. I’ve always been pretty down for experimental eating – I’ll try just about anything once, and have found that I tend to like most food. However, it’s easy to get into food ruts and cook the same 4 or 5 meals over and over again. Spaghetti night anyone?

One of my favorite food blogs is Iowa Girl Eats because she cooks generally healthy food, but doesn’t skimp on flavor or on the fun things you don’t want to completely cut out of your diet (like breakfast muffins). Anyway, today she introduced me to this new blog, Will Cook for Friends, with a recipe I can’t wait to try, particularly since I plan to carve pumpkins this weekend and will have to find something great to do with all that filling. Given that today feels like such a fall day, this looked like the perfect comfort food and I just wanted to share it with you guys. Happy fall!

Portland FashioNxt

This past weekend I was able to go to the Portland Fashion Show under the guise of “trend inspiration”. I think I underestimated the inspiration I’d get from it. Often times on this blog, we talk about health, the environment and living a more well rounded lifestyle. Over the last few years this has become one of the most important issues to me. However, every once in a while, it’s good to be reminded that we all have a creative side that is begging to be challenged and inspired by beauty. Let’s not forget to feed our creativity and take it outside the box whenever we can!

Summer BBQ Weekend


Happy Labor Day weekend. I know everyone will be in vacation mode this Friday so I wanted to get the mood started with a little BBQ pic from my last grill session. I think my next bbq may have to include this charred corn on the cob too! Have a safe and wonderful weekend!

Nature Drive

This photo was actually taken by my brother, Isaac, on our way back from a surfing trip at the Oregon Coast. We went to one of my favorite spots, Indian Beach and had a great time enjoying the waves. One the way back we noticed some cars stopped and were shocked to see 3 elk encroaching the side of the road. This one in the image was particularly impressive. It was crazy (and a little intimidating to see them so close).

Questions that Demand Change

This picture might not scream eco friendly to some but for me it does, for me it provokes questions that in return demand change. I drive past this local dairy farm twice a month, only seeing the cows on occasion. On a day I had extra time, I stopped and talked with one of the farmers. I asked him what time the cows came to the part of the field where the road was, that I wanted to take a picture of them. I was told that the herd only came there once a month and that they rotated the pastures they grazed in to keep them moving and eating in fresh fields.

We live in an age where eco friendly, natural, and organic have become trendy. The trend has forced the hand of many companies to change the way they operate. One of the many benefits of more companies getting in on the eco friendly fad is that the price of earth friendly products becomes less expensive for you and I. As a single parent, I am grateful for the price drop in buying products less harmful to our earth and body.

A problem that arises is that there are companies and marketing teams that know how to give the appearance of green without ever changing their impact on the earth or wellbeing and treatment of the animals on their farms. These companies are greenwashing us, they are allowing us to believe their impact on the earth is much less than it truly is. They are getting in on the trend without joining the cause.

While talking to the farmer of the cow in the photograph, I realized I didn’t really know how the farms that produce the product for my cheese and ice cream obsession were treating their animals or how far my dairy products traveled to make it into my fridge. I recognized as much as I am a label reader, I don’t know if the animals giving the milk ever see real grass fields. I now want to know, what are the farms I am buying from doing to lower their impact on the environment, how are they treating their animals, and are they a part of the trend or are they truly a part of the cause and change?

The questions and changes I am now making for my family are what make this simple picture of a cow eco friendly. Now go out there, ask the questions, demand that companies are honest, and visit your local farms!

Makin’ Pizza

I love getting together with friends or family and cooking a meal together. Above is a shot of me giving my best pizza toss. Below, is a link to the pizza recipe! I got it from Bonappetit – my favorite source for recipe inspiration. My pizza didn’t turn out looking quite this pretty, but I’m sure it was just as tasty! Next time, I’ll make it summer worthy by cooking it on the grill. Sometimes, just getting back to the basics, slowing down, and taking the time to make something from scratch, is what it’s all about!

Urban Gardening

This weeks photo is of my very own, small but prospering urban garden. I live in an apartment with limited space for a large booming garden, which means that I have carefully selected only the items I’ll use frequently. This year that has included heirloom tomatoes, swiss chard, and some herbs (mint, oregano, basil and parsley). It’s not much, but in small spaces it’s all about utilizing the every square inch, which is essentially what I’ve done. We’d love to see some shots of your own creative garden spaces. Handmade orange jello soap fun

Smells so good. Melt & pour soap. I didn’t think I would like to make soap this way but I’ve recently experimented with making handmade soap using the melt & pour process. My usual way is making it the cold process method and that way requires more ingredients, using lye and then waiting weeks for the soap to cure.

Melt & pour, allows you to make an already made soap base, add in fragrance and other additives, then it’s ready to be used after the soap cools down in the mold. I had some transparent M&P soap base that I’ve had for a while and I decided to experiment with it.

I took a regular plastic container, it originally had blackberries in it, and used that as my mold. I melted the soap base down, weighed the two scents that I wanted to use. For this I used orange essential oil and lemon essential oil with a splash of chocolate & strawberry fragrance oil. I also ground up some dried orange peel and mixed it into the soap base. The result was this super cute soap that looks just like jello!
